Rava Dosa
This batter only takes 30 minutes to make and makes the crispiest, most delicious rava dosas!
Inspired by Venkatesh Bhatt’s recipe
Servings: ~20 dosas
Ingredients:
1¼ cup semolina
1 cup wheat flour
1 cup rice flour
5 cups water
1¼ tsp salt
1¼ tsp sugar
1 tsp minced green chili (or 1 green chili, minced)
1 tsp minced ginger
oil
Directions:
Mix 1 cup semolina, wheat flour and rice flour (reserve ¼ cup semolina for later)
Add salt, sugar, green chili, ginger and 4 cups of water and whisk together
Let sit for 30 minutes
After 30 minutes, add 1 more cup of water and ¼ cup semolina and whisk together
Heat large flat pan to medium heat (I use a non-stick pan)
Fill a small cup or ladle with batter and quickly pour out dosa batter onto hot pan in a circular motion
Drizzle the edges with oil
Let the dosa get crispy for a few minutes
Optional - flip dosa to cook the other side for about 1 minute
Fold in half and serve hot with chutney or podi (powder)

*Note: You’ll have to keep stirring the batter between dosas so it doesn’t separate/thicken
