Rava Dosa

This batter only takes 30 minutes to make and makes the crispiest, most delicious rava dosas!

Inspired by Venkatesh Bhatt’s recipe

Servings: ~20 dosas

Ingredients:

  • 1¼ cup semolina

  • 1 cup wheat flour

  • 1 cup rice flour

  • 5 cups water

  • 1¼ tsp salt

  • 1¼ tsp sugar

  • 1 tsp minced green chili (or 1 green chili, minced)

  • 1 tsp minced ginger

  • oil

Directions:

  1. Mix 1 cup semolina, wheat flour and rice flour (reserve ¼ cup semolina for later)

  2. Add salt, sugar, green chili, ginger and 4 cups of water and whisk together

  3. Let sit for 30 minutes

  4. After 30 minutes, add 1 more cup of water and ¼ cup semolina and whisk together

  5. Heat large flat pan to medium heat (I use a non-stick pan)

  6. Fill a small cup or ladle with batter and quickly pour out dosa batter onto hot pan in a circular motion

  7. Drizzle the edges with oil

  8. Let the dosa get crispy for a few minutes

  9. Optional - flip dosa to cook the other side for about 1 minute

  10. Fold in half and serve hot with chutney or podi (powder)

  11. Enjoy!

*Note: You’ll have to keep stirring the batter between dosas so it doesn’t separate/thicken
