Egg Burji

This is my mom’s egg burji recipe. It’s spicy and savory and super easy to make!

Servings: 2-3

Ingredients:

  • 3 tomatoes, diced

  • ½ large onion, diced

  • 6 eggs, beaten

  • 1 tsp chili powder

  • ½ tsp salt

  • ½ tsp turmeric powder

  • 1 tbsp minced garlic (or 6 cloves minced)

  • ⅓ cup chopped cilantro

Directions:

  1. Heat a pan to medium heat and add oil

  2. Start by sauteing diced onions for 3-4 minutes or until translucent

  3. Add in diced tomatoes and cook for 5-6 minutes until tomatoes have softened

  4. Add in chili powder, salt, turmeric powder and garlic and mix well

  5. Add beaten eggs to the mixture 

  6. Continue mixing until liquid has reduced and eggs become crumbly in texture

  7. Mix in chopped cilantro 

  8. Enjoy!
