Veggie Cream Cheese Pinwheels
These cream cheese pinwheels are great for parties, picnics or just a quick snack!
Servings: 10
Ingredients:
8-10 burrito size tortillas
½ bell pepper, finely diced
2 medium carrots, finely diced
2 Persian cucumbers, grated and squeeze water out
1 jalapeno, finely diced
1 tsp minced garlic
2 tsp minced green chilies
1 tsp salt
1 tsp black pepper
2 8 oz. packs of cream cheese, softened
Directions:
Add softened cream cheese, chopped veggies, minced garlic, minced green chilies, salt and pepper to a large bowl and mix well. It should resemble a chunky cream cheese spread
Start assembling the pinwheels by putting a large spoonful of the cream cheese mix onto a tortilla and use a spatula to spread it thinly on the tortilla
Roll the tortilla up and repeat with remaining tortilla
Put the tortilla rolls in the fridge for at least 20 minutes
Remove from the fridge and cut into 1/2 inch pieces
Enjoy!
Optional additional add ins: onion, celery, cilantro, cabbage, shredded cheese and more!
