Vegan Broccoli Soy Curls

This is my vegan version of ‘broccoli beef’ which ironically, I’ve never had, but would guess tastes something like this!

Servings: 4

Ingredients:

  • 2 cups (or 4 oz. weighed out on food scale) dry soy curls (Butler Foods brand)

  • ⅓ cup corn starch 

  • ½ cup vegetable broth

  • 3 tbsp light soy sauce

  • 2 tsp dark soy sauce

  • 2 tbsp vegetarian oyster sauce

  • 1 tsp minced garlic (or 2 cloves, minced)

  • 1 tsp minced ginger

  • 1 medium head of broccoli, cut into florets 

Directions:

  1. Soak soy curls in hot water for 20 minutes

  2. Squeeze the water out of the soy curls and let cool

  3. Once cooled, add corn starch and toss together

  4. Heat a pan on medium heat and add 2 tbsp of oil

  5. Pan fry the soy curls until crispy for about 10 minutes

  6. Remove soy curls from the pan

  7. Add broccoli to the pan with water, cover and let steam for 3 minutes

  8. Once broccoli has steamed, remove and set aside

  9. In the same pan, prepare the sauce by mixing vegetable broth, dark and light soy sauce, ginger, garlic, sugar, vegetarian oyster sauce and crushed red pepper 

  10. Let sauce come to a simmer and add broccoli and soy curls into the sauce

  11. Toss together until broccoli and soy curls are covered in sauce

  12. Serve hot with rice or quinoa and enjoy!
