Peanut Tofu

This is a one-pot meal that’s flavorful and nutritious and perfect for an easy weeknight dinner!

Servings: 4

Ingredients:

  • 1 block of tofu, pressed and cubed

  • 1 small head of broccoli, cut into florets

  • 1 carrot, sliced diagonally

  • ½ medium onion, sliced

  • 1 bell pepper, cubed

  • 1 jalapeño, sliced

  • 2 cups tomato sauce

  • 4 tbsp peanut butter

  • 1 tsp minced garlic (or 2 cloves, minced)

  • 1 tsp minced ginger

  • ½ tsp salt

  • 1 tsp chili powder

  • ½ tsp turmeric

  • 1 tsp coriander powder

  • ½ tsp black pepper

  • 1 tsp sugar

  • 1 tsp lemon juice

  • Optional: ½ cup of chopped cilantro

Directions:

  1. Heat a pan to medium heat and add oil

  2. Pan-fry (or air-fry) tofu until golden and crispy on all sides

  3. Remove tofu from pan and add vegetables to the pan 

  4. Sauté vegetables for 3-4 minutes

  5. Add in tomato sauce, peanut butter, ginger, garlic, lemon juice and spices 

  6. Cook for another 3-4 minutes

  7. Add in tofu and mix well

  8. Top with cilantro 

  9. Enjoy with a side of rice or quinoa!
