Peanut Tofu
This is a one-pot meal that’s flavorful and nutritious and perfect for an easy weeknight dinner!
Servings: 4
Ingredients:
1 block of tofu, pressed and cubed
1 small head of broccoli, cut into florets
1 carrot, sliced diagonally
½ medium onion, sliced
1 bell pepper, cubed
1 jalapeño, sliced
2 cups tomato sauce
4 tbsp peanut butter
1 tsp minced garlic (or 2 cloves, minced)
1 tsp minced ginger
½ tsp salt
1 tsp chili powder
½ tsp turmeric
1 tsp coriander powder
½ tsp black pepper
1 tsp sugar
1 tsp lemon juice
Optional: ½ cup of chopped cilantro
Directions:
Heat a pan to medium heat and add oil
Pan-fry (or air-fry) tofu until golden and crispy on all sides
Remove tofu from pan and add vegetables to the pan
Sauté vegetables for 3-4 minutes
Add in tomato sauce, peanut butter, ginger, garlic, lemon juice and spices
Cook for another 3-4 minutes
Add in tofu and mix well
Top with cilantro
Enjoy with a side of rice or quinoa!
