Mumbai Vada Pav

Vada Pav is one of the best chaat/street foods in my opinion so I had to get my mom’s recipe. This vada pav will definitely curb those India street food cravings!

Servings: 8 sandwiches

Ingredients:

Potato Patty:

  • 4 russet potatoes, boiled and peeled

  • 1 small onion, finely diced

  • 1 cup chopped cilantro

  • ½ cup chopped green onion (green part only)

  • 2 tbsp oil

  • 1 tbsp minced ginger

  • 1 tbsp minced green chili

  • 1 tsp salt

  • 1 tsp turmeric

  • 1 tbsp lemon juice

  • 1 tsp sugar

Batter:

  • ½ cup chickpea flour (besan/chana flour)

  • ½ tsp salt

  • ¼ tsp chili powder

  • ¼ tsp black pepper

  • ¼ tsp turmeric

  • ½ tsp coriander powder

  • ½ cup water

  • 1 tsp oil

Dry Garlic Chutney

  • 2 tbsp oil

  • 1 tbsp minced garlic

  • ½ tsp crushed red pepper

  • 2 tbsp peanuts

  • 4 tbsp coconut powder

  • ¼ tsp salt

  • 1 tbsp kashmiri chili powder

Other

Directions:

  1. Once potato is boiled and peeled, grate it into a bowl

  2. Heat a pan on medium heat and add oil

  3. Add onion and green onion and cook for 3-4 minutes

  4. Add ginger, green chili, salt, turmeric, lemon juice and sugar and mix together

  5. Add grated potato and mix until incorporated

  6. Add cilantro and mix into the potato mixture

  7. Let cool and form into patties or vadas (make it roughly the size of your pav/bread)

  8. Prepare the batter by mixing the ingredients listed under ‘batter’ and mix together

  9. Heat a frying pot with oil

  10. Once oil is hot, dip a vada into the batter and fully coat it

  11. Carefully drop the vada into the oil and fry on each side until golden and crispy

  12. Remove from the oil and repeat with remaining vadas

  13. To prepare the garlic chutney heat a pan on medium heat and add oil

  14. Add garlic and peanuts and cook for 2-3 minutes until garlic is fragrant (but don’t let it burn)

  15. Add remaining ingredients and cook for another 1-2 minutes

  16. Remove from the pan and let cool

  17. Add to a spice grinder and grind the mixture together

  18. To assemble the vada pav slice the pav bread through the middle and lightly toast

  19. Spread cilantro chutney on both side of the inside of the bread

  20. Add the vada onto the bread and sprinkle on dry garlic chutney

  21. Serve hot and enjoy!
