Tandoori Caramelized Onion Pinwheels
I’ve been obsessed with caramelized onions lately and this is one of my favorite ways to use them!
Servings: ~15
Ingredients:
2 onions, thinly sliced
4 tbsp oil
2 tsp garlic powder
1 tsp chili powder
1 tsp garam masala
½ tsp salt
1 tsp cumin powder
1 tsp coriander powder
1 tsp ginger powder
Pinch of turmeric
1 sheet of puff pastry dough
2 cups shredded mozzarella
Directions:
Heat a pan on medium heat and add 2 tbsp of olive oil
Add sliced onion and cook down for 30 minutes, stirring often - add spices 20 minutes in
If needed, add a splash of water to unstick the onions from the pan
Preheat oven to 400 degrees Fahrenheit
Remove from the heat and let the onions completely cool
Roll out the pull pastry sheet
Spread the caramelized onions onto the sheet
Sprinkle with shredded cheese
Roll into a log and using a sharp knife cut into even pieces (~½ inch thick)
Place each slices onto a parchment lined baking sheet
Bake for 20 minutes
