Spiced Sweet Potatoes with Whipped Feta
These are really two side dishes in one that make for a great addition to any meal!
Servings: 6
Ingredients:
3 sweet potatoes, cut into circular slices
½ cup olive oil
½ tsp chili powder (1 tsp if you want a kick)
2 tsp salt
1 tbsp garlic powder
2 tsp cinnamon
1 tsp paprika
8 oz crumbled feta
½ cup Greek yogurt
1 tsp salt
1 tsp pepper
2 tsp cold water
Directions:
Preheat oven to 400 degrees
Add the sliced sweet potato to a large mixing bowl
Drizzle on ¼ cup of olive oil and add spices
Mix well until the potatoes are evenly coated
Place on a parchment paper lined baking sheet and bake for 20 minutes, then flip and bake for another 25 minutes
While potatoes are baking start making feta dip by putting feta, greek yogurt, salt, pepper and water into a food processor
Slowly add in remaining ¼ cup of olive oil and blend until the dip is smooth
Let cool in the fridge until potatoes are done baking
To assemble, spread the feta dip onto a tray
Once potatoes have cool arrange them on top of the dip
