Crispy Quinoa Kale Apple Salad

This is one of my favorite salads - it has a great blend of textures and flavors!

Servings: 6

Ingredients:

Dressing:

  • ¼ cup olive oil

  • 1 tbsp dijon mustard

  • 1½ tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp salt

  • ½ tsp pepper

  • 1 tbsp hot honey

  • 1 tbsp maple syrup

  • 1 tbsp rice vinegar

Salad:

  • 2 cups cooked quinoa

  • 1 honey crisp apple, thinly sliced 

  • 1 cup of chopped walnuts

  • 3 tbsp butter

  • 3 tbsp brown sugar

  • Chopped kale (~4-5 large handfuls, stems removed)

Directions:

  1. Add the ingredients for the dressing to a bowl and mix together 

  2. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper

  3. Add the cooked quinoa onto the baking sheet and drizzle some olive oil (~2-3 tbsp) and add salt and pepper (eyeball this)

  4. Spread the quinoa out onto the baking sheet and bake for 25 minutes

  5. To make the candied walnuts add butter and walnuts to a small pan and cook for 2-3 minutes

  6. Add brown sugar and continue coating until everything is melted and walnuts are fully coated

  7. Spread the walnuts out onto a piece of parchment paper and let cool

  8. Add 4-5 large handfuls of chopped kale to a mixing bowl and remove stems

  9. Drizzle with olive oil and massage the kale for 1 minute

  10. Assemble the salad by adding the sliced apples, walnuts, crispy quinoa and dressing

  11. Toss everything together and enjoy!
