Crispy Quinoa Kale Apple Salad
This is one of my favorite salads - it has a great blend of textures and flavors!
Servings: 6
Ingredients:
Dressing:
¼ cup olive oil
1 tbsp dijon mustard
1½ tsp garlic powder
1 tsp onion powder
½ tsp salt
½ tsp pepper
1 tbsp hot honey
1 tbsp maple syrup
1 tbsp rice vinegar
Salad:
2 cups cooked quinoa
1 honey crisp apple, thinly sliced
1 cup of chopped walnuts
3 tbsp butter
3 tbsp brown sugar
Chopped kale (~4-5 large handfuls, stems removed)
Directions:
Add the ingredients for the dressing to a bowl and mix together
Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper
Add the cooked quinoa onto the baking sheet and drizzle some olive oil (~2-3 tbsp) and add salt and pepper (eyeball this)
Spread the quinoa out onto the baking sheet and bake for 25 minutes
To make the candied walnuts add butter and walnuts to a small pan and cook for 2-3 minutes
Add brown sugar and continue coating until everything is melted and walnuts are fully coated
Spread the walnuts out onto a piece of parchment paper and let cool
Add 4-5 large handfuls of chopped kale to a mixing bowl and remove stems
Drizzle with olive oil and massage the kale for 1 minute
Assemble the salad by adding the sliced apples, walnuts, crispy quinoa and dressing
Toss everything together and enjoy!
