Instapot Mexican Quinoa Khichdi

This dish is a fusion between a Mexican burrito bowl and Khichdi! Perfect for meal prep or quick weeknight meals.

Servings: 6

Ingredients:

  • 1 cup quinoa

  • 16 oz can of black beans, rinsed

  • 2-3 stalks of celery, finely chopped

  • 1 large carrot, finely chopped

  • 1 tomato, finely diced

  • 1 jalapeño, finely diced

  • 1 small onion, finely diced

  • 1 bell pepper, finely diced

  • 1½ cup enchilada sauce

  • ½ cup salsa (try my homemade salsa!)

  • 1 cup water

  • 1 tsp chili powder

  • 1 tsp coriander powder

  • ½ tsp salt

Directions:

  1. Put all the ingredients into the instant pot

  2. Pressure cook on high for 10 minutes

  3. Once timer goes off, let pressure release for 15 minutes then release additional pressure manually

  4. Remove lid and fluff up quinoa mixture

  5. Serve with your choice of toppings (I like to add lettuce, avocado, cilantro, sour cream and a drizzle of hot sauce)

  6. Enjoy!
