Khaman
Khaman, similar to dhokla, is a delicious and nutritious snack that everyone will love!
Servings: 6
Ingredients:
Khaman Batter:
1 cups chana dal (split gram dal)
¼ cup regular or Greek yogurt
3 tbsp oil
1 tsp minced ginger
1 tsp minced green chilies
1 tsp salt
¼ tsp turmeric powder
Pinch of citric acid
2 tbsp chickpea flour
¾ cup water
1 tsp Eno
Tempering/Vaghar:
4 tbsp oil
1 heaping tsp mustard seeds
1 heaping tsp sesame seeds
Directions:
Soak 1 cup of chana dal in hot water for 3-4 hours
Drain the soaked chana dal and add to a blender or food processor with the remaining khaman batter ingredients except the Eno
Blend until there are no chunks of chana dal and batter feels smooth (it will still look grainy)
Cover the batter and let rest for 4-6 ohurs
Once the batter has set add the Eno and 1 tbsp of water and mix quickly until well combined
Pour the batter into a greased steel pan (~9.5 inches diameter)
Place into a steam pot and steam for 20 minutes
Once the khaman is done steaming remove it from the steam pot and let it cool for 10 minutes
While it’s cooling, prepare the tempering by adding oil to a small pan on medium heat
First add the mustard seeds and once it starts bubbling add the sesame seeds
Let the tempering bubble for about 30 seconds then remove from heat
Cut the khaman into diamond shaped pieces (or whatever preferred shape you want)
Drizzle on the tempering and enjoy!
