Walnut Cauliflower Tacos
This delicious filling is not just great in tacos, you can add it to quesadillas, burritos, bowls and more!
Servings: 12-15 tacos
Ingredients:
1 small head of cauliflower, cut into pieces
2 cups chopped walnuts
½ onion, finely chopped
4 tbsp soy sauce
2 tbsp garlic powder
1 tbsp onion powder
1 tbsp chili powder
1 tbsp cumin powder
½ tsp pepper
½ tsp salt
Taco Assembly:
Tortillas
Shredded lettuce
Sour cream
Sliced jalapeños
Directions:
Add the walnuts and cauliflower into a food processor and pulse until minced
Heat a pan on medium heat and add 2 tbsp of oil
Saute the onion until translucent then add in the walnut cauliflower mixture
Add the soy sauce and spices and cook down for 8-10 minutes
Once the mixture is toasted and cooked through, remove from heat and assemble your tacos
