Vegan Shawarma

This vegan shawarma is so flavorful and perfect in pita wraps or over a salad!

Servings: 6

Ingredients:

Marinade

  • 4 cups (or 8 oz. weighed out on food scale) dry soy curls (Butler Foods brand)

  • ½ cup soy curl water

  • 2 tbsp olive oil

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp cumin powder

  • 2 tsp oregano

  • 2 tsp coriander powder

  • 1 ½ tsp chili powder

  • ½ tsp ‘better than bouillon’ (vegetable base) paste

  • ½ tsp salt

  • ½ tsp chili crisp

  • 1 tbsp soy sauce

Wrap assembly:

  • Greek pita flatbread

  • Hummus

  • Tzatziki (use plant based version if making this vegan)

  • Diced tomatoes and cucumber

  • Sriracha 

Directions:

  1. Soak soy curls in a large bowl in hot water for 20 minutes

  2. Strain out water from the soy curls and set aside ½ cup of soaked water

  3. Let strained soy curls cool and once cooled, squeeze out excess water from the soy curls

  4. In a large mixing bowl, add soy curl water, olive oil, spices, chili oil and soy sauce and whisk together

  5. Add in soy curls and coat evenly in marinade

  6. Let soy curls marinate in the fridge for 30 minutes

  7. Spread soy curls evenly onto a baking sheet

  8. Bake at 425 degrees Fahrenheit for 20 minutes

  9. Assemble wraps by spreading hummus and tzatziki onto warmed pita wrap

  10. Add soy curls, tomatoes, cucumber and any other toppings you want

  11. Drizzle with sriracha and enjoy!
