Gujarati Thiki Puri
Thiki puri is basically a better version of plain puri - more spice and more flavor and I personally love pairing it with some chai.
Servings: 70-75 puris
Ingredients:
4 cups wheat flour
1 tbsp salt
1¼ tsp turmeric
2 tsp chili powder
1 tbsp ajwain seeds
1 tsp cumin powder
⅓ cup oil + 1 tsp oil
1½ cup warm water
Directions:
If you have a stand mixer put all the dry ingredients and ⅓ cup oil into the mixing bowl and mix together
If not, use a large mixing bowl and mix with a wooden or silicone spoon
Gradually add in water
Keep mixing until it forms a firm dough
Drizzle with a little oil (about 1 tsp) to smooth out the dough
Form ~1 inch balls and roll out into a small puri (can also use a press if you have one)
Heat a frying pot with oil on medium heat
Once oil is hot add 1-2 puris at a time into the oil and fry on each side
Continue dunking the puri to ensure it’s covered in oil and puffs up
Remove from the oil and place on a plate with a paper towel to absorb excess oil
Serve hot and enjoy!
