Gujarati Thiki Puri

Thiki puri is basically a better version of plain puri - more spice and more flavor and I personally love pairing it with some chai.

Servings: 70-75 puris

Ingredients:

  • 4 cups wheat flour

  • 1 tbsp salt

  • 1¼ tsp turmeric

  • 2 tsp chili powder

  • 1 tbsp ajwain seeds

  • 1 tsp cumin powder

  • ⅓ cup oil + 1 tsp oil

  • 1½ cup warm water

Directions:

  1. If you have a stand mixer put all the dry ingredients and ⅓ cup oil into the mixing bowl and mix together

  2. If not, use a large mixing bowl and mix with a wooden or silicone spoon

  3. Gradually add in water 

  4. Keep mixing until it forms a firm dough

  5. Drizzle with a little oil (about 1 tsp) to smooth out the dough

  6. Form ~1 inch balls and roll out into a small puri (can also use a press if you have one)

  7. Heat a frying pot with oil on medium heat

  8. Once oil is hot add 1-2 puris at a time into the oil and fry on each side

  9. Continue dunking the puri to ensure it’s covered in oil and puffs up

  10. Remove from the oil and place on a plate with a paper towel to absorb excess oil 

  11. Serve hot and enjoy!
