Sundried Tomato Pesto

This sundried tomato pesto is a great spread on everything: pizzas, sandwiches, wraps and more!

Servings: 1½ cups of pesto

Ingredients:

  • ½ cup chopped walnuts

  • ¾ cup sundried tomato (drained oil)

  • 1 tsp minced garlic (or 2 cloves)

  • ½ cup parmesan

  • 1 tbsp crushed red pepper

  • 1 tsp sugar

  • ½ cup chopped basil

  • 2 tbsp sundried tomato oil

  • 2 tbsp olive oil (i like to use a jalapeno infused olive oil)

  • Pinch of salt

Directions:

  1. Add everything except oil into a food processor

  2. Start pulsing together and slowly add in sundried tomato oil and olive oil

  3. Pulse until you reach desired consistency

  4. Store in an airtight container

  5. Enjoy!
