Sundried Tomato Pesto
This sundried tomato pesto is a great spread on everything: pizzas, sandwiches, wraps and more!
Servings: 1½ cups of pesto
Ingredients:
½ cup chopped walnuts
¾ cup sundried tomato (drained oil)
1 tsp minced garlic (or 2 cloves)
½ cup parmesan
1 tbsp crushed red pepper
1 tsp sugar
½ cup chopped basil
2 tbsp sundried tomato oil
2 tbsp olive oil (i like to use a jalapeno infused olive oil)
Pinch of salt
Directions:
Add everything except oil into a food processor
Start pulsing together and slowly add in sundried tomato oil and olive oil
Pulse until you reach desired consistency
Store in an airtight container
