Instapot Spinach Dal

This spinach dal is quick and comforting and the perfect thing for when you don’t know what to make.

Servings: 2

Ingredients:

  • 2 tsp oil

  • ½ tsp cumin seeds

  • Pinch of asafoetida

  • 1 tsp minced garlic

  • ½ tsp chili powder

  • ¼ tsp turmeric

  • ½ tsp salt

  • 1 tomato, diced

  • ½ cup masoor, rinsed

  • 2 cups water

  • 1 big handful of spinach, chopped

Directions:

  1. Turn instant pot onto saute mode and add oil

  2. Add cumin seeds, asafoetida, garlic, chili powder, turmeric and salt

  3. Mix well then add tomatoes and saute for 1-2 minutes

  4. Add rinsed masoor dal and 1 cup of water

  5. Pressure cook on high for 10 minutes. Let pressure release for 10 minutes then manually release remaining pressure

  6. Remove the lid from the instant pot and add 1 more cup of water and chopped spinach 

  7. Mix well and let sit for 3-4 minutes for spinach to soften

  8. Serve hot and enjoy!
