Instapot Spinach Dal
This spinach dal is quick and comforting and the perfect thing for when you don’t know what to make.
Servings: 2
Ingredients:
2 tsp oil
½ tsp cumin seeds
Pinch of asafoetida
1 tsp minced garlic
½ tsp chili powder
¼ tsp turmeric
½ tsp salt
1 tomato, diced
½ cup masoor, rinsed
2 cups water
1 big handful of spinach, chopped
Directions:
Turn instant pot onto saute mode and add oil
Add cumin seeds, asafoetida, garlic, chili powder, turmeric and salt
Mix well then add tomatoes and saute for 1-2 minutes
Add rinsed masoor dal and 1 cup of water
Pressure cook on high for 10 minutes. Let pressure release for 10 minutes then manually release remaining pressure
Remove the lid from the instant pot and add 1 more cup of water and chopped spinach
Mix well and let sit for 3-4 minutes for spinach to soften
Serve hot and enjoy!
