Instant Pot Pav Bhaji
This pav bhaji recipe is so easy and delicious and always hits the spot for those Indian street food cravings!
Servings: 5-6
Ingredients:
2 tbsp oil
1 tsp cumin (jeera) seeds
2 medium onions, finely diced
3 russet potatoes, peeled and finely diced
1 lb bag frozen mixed vegetables (peas, carrots, corn, green beans mixture), defrosted
1 tbsp minced ginger
1 tbsp minced garlic
2 tsp salt
1 tsp chili powder
1 tsp coriander powder
½ tsp turmeric powder
1½ cup + ¼ cup tomato sauce
1½ cup water
1½ tbsp pav bhaji masala
Directions:
Turn Instant Pot onto saute mode and add oil and let heat up
Once oil is hot add all ingredients except tomato sauce, water and pav bhaji masala
Cook the vegetables and spices for 3-5 minutes
Add 1½ cup tomato sauce and 1½ cup water
Mix well and add lid to the Instant Pot
Cancel saute mode and pressure cook on high for 20 minutes
Once cooking is done and naturally vented, open lid and blend with an immersion blender until you reach desired chunkiness
Add remaining ¼ cup tomato sauce and pav bhaji masala and mix well
Serve hot, topped with finely chopped onions, cilantro and a squeeze of lemon juice with toasted buttery buns or pav bread
