Bang Bang Broccoli
This is my take on Planta Queen’s ‘Bang Bang Broccoli’ - a great balance of sweet, spicy and crispy that will surely leave you wanting more!
Servings: 6
Ingredients:
1 large head of broccoli, cut into florets
¾ cup all purpose flour
¼ cup corn starch
1 cup seltzer water
2 cups Panko breadcrumbs
Bang Bang Sauce:
½ cup vegan Mayo
⅓ cup sweet chili sauce
¼ cup sriracha
½ tsp garlic powder
1 tsp chili powder
Pinch of salt and pepper
2 tbsp water
Directions:
Preheat oven to 425 degrees Farenheit
Prepare batter by mixing flour, corn starch and seltzer water and whisk together
Coat the florets in the batter then coat with panko and place on a baking sheet
Repeat with the rest of the broccoli
Bake for 18 minutes
Meanwhile, prepare sauce by vegan mayo, sweet chili sauce, sriracha, garlic powder, chili powder, salt, pepper and water
Remove broccoli from oven and coat the florets in sauce
Serve hot and enjoy!
