Tortellini Soup
This tortellini soup is quick, filling and a great way to use up any veggies!
Servings: 5-6
Ingredients:
½ small onion, finely diced
2 carrots, finely diced
2 celery stalks, finely diced
½ small head of broccoli, finely chopped
½ bell pepper, finely diced
1 tbsp minced garlic (or 6 cloves garlic)
14.5 oz. can crushed tomatoes
5 cups water + 2 tsp vegetable bouillon paste (or 5 cups of vegetable broth)
1 can white beans, drained and rinsed
3 cups uncooked cheese tortellini (I get mine from Costco)
Directions:
Heat a pan on medium heat and add 2 tbsp of oil
Add all veggies and cook down for 8-10 minutes
Add crushed tomatoes and broth and bring to a simmer
Add white beans and tortellini and let simmer for 4-5 minutes
Optional: sprinkle with crushed red pepper
Serve hot and enjoy!
