Buffalo Cauliflower

This makes for a great party appetizer or pairs well in tacos, salads and wraps!

Servings: 6

Ingredients:

  • 1 medium head of cauliflower, cut into florets

  • ¾ cup flour

  • ¼ cup corn starch

  • 1 cup water

  • 2 cups panko breadcrumbs

  • 2 cups buffalo sauce

  • 4 tbsp butter (or vegan butter)

Directions:

  1. Preheat oven to 450 degrees Farenheit

  2. Prepare batter by mixing flour, corn starch and water and whisk together

  3. Coat the florets in the batter then coat with panko and place on a baking sheet

  4. Repeat with the rest of the cauliflower

  5. Bake for 25 minutes

  6. Meanwhile, prepare sauce by mixing buffalo sauce and butter (i usually just microwave it)

  7. Remove cauliflower from oven and coat the florets in sauce

  8. Serve with ranch or any choice of dipping sauce

  9. Enjoy!

Optional: place the florets back in the oven after coating in sauce for another 5-8 minutes to let sauce soak in
